Ingredients

  • 1 lb fresh green beans trimmed
  • 1 1/2 lbs baby potatoes red or Yukon gold
  • 1/2 lb cooked beef diced or crumbled
  • 3 tbsp butter melted
  • 2 cloves garlic minced
  • 1 packet ranch seasoning mix
  • to taste salt
  • to taste pepper
  • 2 tbsp fresh parsley chopped, for garnish

Instructions

  • Boil the baby potatoes in a pot of salted water for 10-12 minutes, until fork-tender. Drain and set aside.
  • Cook the green beans in another pot of boiling water for 5-7 minutes until tender-crisp. Drain and set aside.
  • In a large skillet, heat butter over medium heat and sauté the garlic until fragrant.
  • Add the cooked beef to the skillet and warm it through.
  • Mix the ranch seasoning with the melted butter and pour over the beef, potatoes, and green beans. Toss everything gently to combine.
  • Season the dish with salt and pepper to taste. Garnish with fresh parsley and serve warm.

Notes

  • You can substitute beef with chicken or tofu for a variation.
  • Adjust seasoning to your preference by adding herbs like thyme or dill.
